【Arashiyama】 Daizen【Kyo-sushi】

Sushi has become world popular today, and I guess most people have had at least once.
In Kyoto, however, we have a different type of sushi. It is Kyo-zushi or Kyo-sushi, which means Kyoto-style sushi.

Because Kyoto is located inland, away from the sea, the people of Kyoto in olden days could not eat sashimi or raw fish.


So, instead of using raw fish, they developed a different kind of sushi, in which they use marinated or cooked fish.


At this restaurant, you can enjoy different kinds of Kyo-sushi in addition to regular-style sushi.
Interior

It's my experience that most foreign tourists like Inari-zushi and Sasamaki.
To order, simply say "Sasa to Inari" (Combination of Sasamaki and Inari-zushi).

In Sasamaki, the sushi is wrapped in a bamboo leaf.


Push in the stem, and you can untie the leaf.



From under the leaf, marinated sea bream and sushi rice appear.
Since rice is already flavored in Kyo-sushi, we don't usually use soy sauce when eating it.
I recommend you give it a try as it is at first.
Then, if you still feel like dipping the sushi into soy sauce, don't hesitate to ask the people there for some.

In Inari-zushi, sweetened sushi rice is wrapped in fried tofu.

You can buy Inari-zushi throughout Japan.
Inari-zushi at this restaurant tastes good with its relatively light flavor.


Sabazushi (marinated mackerel sushi) is one of the most famous kinds of Kyo-sushi.

In olden days, mackerel were caught near the northern coast of Honshu Island, located about 55km (34 miles) away from Kyoto, as the crow flies.


Immediately after catching a mackerel, fisherman removed the blood from the fish to avoid its flesh from becoming bad.
They then sprinkled salt on the fish to preserve it.
Afterwards, the fish was carried on the backs of people over a mountainous region all the way to Kyoto.
The movements and jostling of the fish while it was being transported, insured that by the time it reached Kyoto it was well marinated.  And that was how people in Kyoto started to use marinated mackerel.

Sabazushi is wrapped with seaweed. Please remove the seaweed before taking a bite.




Many Kyo-sushi restaurants provide Sabazushi thoroughout the year, but it is actually a seasonal food.
The best season for Sabazushi is December, and I can recommend it from October to March.

This chef has a direct route to the fishery harbour, so as to obtain the best fish for his sushi.


I hope you have the chance to enjoy Kyo-sushi while you're here, because it's only available in Japan.

【100% halal foods】 Rose Cafe

Hi! Welcome to Machi's Taxi Restaurant Guide.


Here's some good news for Muslim tourists.

Due to the lack of halal foods in Japan, Muslim tourists sometimes find it necessary to go to vegetarian restaurants.
In Kyoto. it may be a nice experience to visit a traditional vegetarian restaurant, but such restaurants are not easy to find.

Rose Cafe is located near the Kyoto Muslim Association. It is owned by a Turkish man, and offers a complete selection of only halal foods.
Although some restaurants in Kyoto can provide some halal foods, at this restaurant you have no worries about receiving anything other than genuine halal dishes.

This is the "Rose Cafe Plate Set" - price 900JPY.

This plate includes chicken kebab, a patty (choose beef or chicken), salad, and rice.
They also serve a cup of soup separately.

For me, the taste of kebab was unfamiliar.
I guess the spices in the food are different from what I am accustomed to eating.
Even so, I found its taste delicious.


This is a "mackerel sandwich"-price 600JPY.

I don't think it has ever occurred to the Japanese to put mackerel into sandwiches.
I tried it and, yes, it really was mackerel, tomato, and french-like bread. The combination seemed strange to me at first.
Actually, it was also very nice.

Halal dishes are not only for Muslims. They are very healthy dishes that everyone can enjoy.

On the north of this cafe, there's a narrow street.
Inside the street is a Kyoto Muslim Association. There is a Mosque in the building.

【Spicy】 TAMPOPO 【Ramen】

Hi!  Welcome to Machi's Taxi Restaurant Guide.

Today, I'd like to introduce to you one of the local veteran ramen restaurants in Kyoto, the name of which is Tampopo.

This is "ramen-nami" ("nami" means regular size) - price 650JPY

It appears to be very spicy. It is, however, not as hot as it looks.
After a brief period of hot spiciness, you start to taste the flavor of the dashi (broth).
The dashi seems to be made from chicken.

Even though this restaurant doesn't have English menus, it is easy to order.
Mainly, they have two kinds of ramen. Ramen or Charshu-men.
You can also choose their sizes from three kinds, "Nami"(regular), "Dai"(big), "Toku"(super-big).

"Charshu" is Chinese style roasted pork.
Although the regular ramen has three or four pieces of charshu, Charshu-men includes much more charshu.

If you want to order the big-sized charshu-men, please say, "Charshu-men dai!".
"Charshu-men Toku" is the most expensive menu item at this restaurant, and is 1000JPY.

At this restaurant, you have to go to pick up your glass of water by yourself.
There is a water-server and pile of glasses near the entrance.

I took my foreign guests here several times when they requested ramen for their lunch, and they always have very good comments.

You may recall a movie which has the same name as this restaurant, "Tampopo" (meaning dandelion).
In the film a widow woman and some men try to create the best-tasting ramen.

The restaurant was named after the film, because the founder was very fond of the movie.

【Chirashi】 Suehiro 【Kyosushi】

"Kyosushi" is a word which abbreviates the phrase "Kyoto-style sushi".
Since Kyoto is a city located on the inland, people in Kyoto in olden days were not able to eat raw fish.

Consequently, they had to develop their own different kinds of sushi, using marinated fish, cooked fish, vegetables, and other materials.  This type of sushi is what is now referred to as kyosushi.

In kyosushi, the sushi rice is already flavored, so people don't usually add soy sauce to it when they eat it.

Nowadays, however, because of modern transport innovations, kyosushi restaurants can get better materials, and prepare their food in traditional styles.

This restaurant "Suehiro" was founded about 170 years ago, during the Edo period, and has been handed down for generations.

Suehiro boasts its elaborate "Jo-chirashi" - price 1700JPY.

The prefix "Jo" means upper grade.  Although this restaurant also has "Nami-chirashi" or "regular chirashi", I definitely recommend "Jo-chirashi".

At the time of this writing, the ingredients included are stewed shiitake-mushroom, grilled conger eel, marinated fish, boiled shrimp, bamboo shoots, and so on.
Bamboo shoots are one of Kyoto's seasonal foods in spring.
The thin yellow strings under the ingredients are sliced grilled egg.  And underneath those is the sushi rice.

These ingredients vary slightly, according to their availability.

You can't make a reservation at this restaurant because it is very small place with only seven seats.

If you do not wish to wait in line in front of the restaurant, I recommend you avoid their busy lunchtime hours.
You can also ask them for a take-out .  I'd say a good choice is to order a boxed lunch to go.
Just say, " Mochikaeri de, Jo-chirashi", to take away with you.
